Ingredients:
3 1/4 cups of shredded coconut
3/4 cup of canned sweetened condensed milk (about 1/2 can)
1/2 cup chocolate chips or other chocolate like Hershey's bar
Instructions:
- Preheat oven to 350 degrees and line a large cookie sheet with parchment paper
- In a medium bowl combine the coconut and the sweetened condensed milk with a spoon until the coconut and milk are completely mixed (the mixture will be very sticky but not too wet)
- Scoop 2 tablespoons at a time of the mixture onto your cookie sheet about 1 inch apart from each other
- Bake for 15 - 20 minutes until the cookies are golden brown on top
- While cookies are cooling, melt your chocolate (in a microwave is fine as long as you use a microwaveable bowl)
- Once cookies have cooled, dip the bottom of each cookie in the melted chocolate and then place the cookies on a baking rack to dry
Store any left overs in an air tight container for up to 4 days. Enjoy!
