Ingredients:
12 oz ground pork (orr ground beef or ground turkey)
1 cup (or 8 oz) cooked spaghetti
2 oz grated parmesan
6 oz sliced cremini mushrooms
1 tsp italian seasoning blend
1 Tbsp mayonnaise
¼ cup Italian breadcrumbs (Panko or other brand)
1 cup (or 8 oz) marinara sauce
salt and pepper to taste
Instructions:
Prepare the ingredients:
- Preheat oven to 425 degrees
- Rinse and pat dry fresh produce
- Cook spaghetti 8 - 10 minutes until al dente
- Combine cooked spaghetti, 2 tsp. olive oil, and pinch of salt in a small baking dish
- Top evenly with mushrooms and marinara sauce
Make the meatballs:
- In a mixing bowl, combine ground meat, panko, Italian seasoning, mayonnaise, half the Parmesan (reserve remaining for garnish), ¼ tsp. salt and pinch of black pepper
- Form meat mixture into six equally-sized meatballs (golf ball size)
- Place evenly over spaghetti-mushroom mixture in baking dish
Bake the dish:
- Bake uncovered in hot oven for about 25 - 30 minutes until meatballs reach a minimum internal temperature of 160 degrees
- Carefully, remove from oven. Stir spaghetti and sauce until combine
- Plate meatballs and pasta mixture and top with remaining parmesan
