Recipe shared by Amy who found it on biggerbolderbaking.com (note that the recipe ingredients sound very similar to the energy bites recipe above)
Ingredients:
2 large bananas
1 3/4 cup quick oats
1/2 cup chocolate chips (for fun try the mini chocolate chips or substitute peanut butter chips)
Instructions:
- Preheat oven to 350 degrees and line a large cookie sheet with parchment paper
- Mash bananas in a large bowl (make sure there's no lumps)
- Add in the oats and mix well to combine
- Add in the chocolate chips and mix well
- Scoop 2 tablespoons at a time of the mixture onto your cookie sheet about 1 inch apart from each other
- Bake for 15 - 20 minutes until the cookies are golden brown on top
After they cool down, they are ready to eat. Store any left overs in an air tight container for up to 2 days. Enjoy!
